A truffle is a Tuber that grows 3-12 inches below the ground at the base of certain trees. It can only be located by pigs or dogs. The White Truffle or Alba Truffles comes from the northern region of Italy. The flesh of the white ranges from pale cream to brown with white marbling and are available in the months of October & November. Alba truffles have an aroma similar to deep-fried sunflower seeds or walnuts. Truffles command a high price because they are considered a delicacy.
Recommended uses: The extremely refined flavour of the white truffle matches wonderfully with butter for dressing pastas and rice dishes. To make excellet salads; slice and mix porcini mushrooms or royal agarics, season with salt, pepper, lemon juice and extra virgin olive oil. White or black truffles thinly sliced may be inserted in meats, foie gras, pates or stuffings.
