![]() As an additional mid-winter event, Sabatino Tartufi offers Truffle Cooking Classes in a special workshop devoted to the wonders of the black and white truffle - the rarest and most exotic ingredient in classic Italian cuisine. The workshop opens on Monday evening with a truffle dinner at Sabatino’s farmhouse in Umbria, Italy's foremost region of truffle production. On successive days Sabatino accompanies participants on a truffle hunt; tours with them through one of the world’s most important – and still artisanal – truffle brokers, where just breathing the fragrant air is a rarefied experience. Restaurant meals focus on truffles and complementary wines – particularly the prized whites of Orvieto – as the centerpiece. Wine tastings and discussions throughout the workshop assure guests of a new understanding of one of the world’s most mysterious gastronomic joys. All instruction is in English. Recipes are geared to the home cook. Guests are supplied with aprons as well as detailed recipe booklets that are theirs to keep. Our Culinary Program offers a variety of subjects for everyone and at times that are convenient for you. Whether you like to get very knoledge about truffles sit back and let us do the work, we have the class that's right for you. Spend an evening or even a few days with us. In our single-subject classes you'll learn new skills in just a few hours that will last a lifetime. Or, enroll in one of our series classes and make new friends as you meet regularly to delve further into the topics as the series progresses.From time to time we invite local or celebrity chefs to share their expertise with our students. These special appearances offer you the unique opportunity to learn from experienced chefs, many who have written cookbooks, appeared on national television shows, cooked at world-famous restaurants, or have been trained at renowned culinary institutes.
